Baking quesadillas in the oven on a sheet pan is the very easiest way to make several quesadillas all at one time. Skip the stove and save time with these oven-baked quesadillas!

They’re easily customizable based on what you’ve got in your pantry! I like to use this recipe as a blueprint and use up whatever we’ve got in the fridge or pantry. Ingredients:

  • 1 tbsp. Extra-virgin olive oil
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 1 1/2 lb. Ground beef
  • 1 tsp. Chili powder
  • 1 tsp. Cumin
  • 1/2 tsp. Smoked paprika
  • Kosher salt
  • Freshly ground black pepper
  • 8 large flour tortillas
  • 1 c. Shredded cheddar
  • 1 c. Shredded monterey
  • 2 green onions, thinly sliced
  • Sour cream, for garnish
  • Pico de gallo, for garnish
