Instructions:
Step 1: Prepare the Crust
- Preheat Oven: Preheat your oven to 325°F (160°C).
- Mix Ingredients: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Form the Crust: Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let it cool.
Step 2: Prepare the Apple Filling
- Cook Apples: In a saucepan over medium heat, combine the diced apples, sugar, cinnamon, lemon juice, and cornstarch. Cook until the apples are tender (about 5-7 minutes). Remove from heat and set aside to cool slightly.
Step 3: Prepare the Cheesecake Filling
- Beat Cream Cheese: In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until well combined.
- Add Eggs: Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
- Add Sour Cream: Fold in the sour cream until smooth.
Step 4: Assemble the Cheesecake
- Layer Ingredients: Pour half of the cheesecake mixture over the cooled crust. Spread the cooked apple filling evenly over this layer, then pour the remaining cheesecake mixture on top.
- Prepare the Crumble: In a separate bowl, mix the flour, rolled oats, brown sugar, butter, cinnamon, and salt until crumbly. Sprinkle the crumble mixture evenly over the cheesecake.
Step 5: Bake
- Bake Cheesecake: Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Cool: Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
