1. Preheat the Oven:

Preheat your oven to 425°F (220°C). This high temperature will help the chicken skin crisp up beautifully.

2. Prepare the Chicken:

  • Pat the chicken dry with paper towels. This helps the skin get crispy when baked.
  • Place the chicken pieces on a baking sheet lined with parchment paper or aluminum foil for easy cleanup.

3. Season the Chicken:

  • In a small bowl, mix together the olive oil (or melted butter), garlic powder, onion powder, paprika, thyme, rosemary (if using), salt, and pepper.
  • Rub the seasoning mixture all over the chicken, making sure to coat both sides and under the skin (if using bone-in, skin-on chicken). The more you rub it in, the more flavorful your chicken will be!

4. Bake the Chicken:

  • Arrange the chicken on the baking sheet in a single layer. If you’re using skin-on pieces, make sure the skin is facing up to get that crispy, golden texture.
  • Place the baking sheet in the preheated oven and bake for 35-45 minutes, depending on the size and type of chicken pieces. Chicken breasts may cook faster than thighs or drumsticks.
  • Check for doneness by using a meat thermometer — the internal temperature should reach 165°F (74°C). If you don’t have a thermometer, you can cut into the thickest part of the chicken to make sure the juices run clear.
