For the Stuffed Peppers:
3 bell peppers
1/2 cup rice
1 cup water
1/2 tsp salt (for rice)
1 onion, finely chopped
2 cloves garlic, minced
300 g (10.6 oz) ground beef
400 g (14 oz) chopped tomatoes
1 tsp Italian herbs
1/2 tsp salt (for filling)
Black pepper, to taste
Bunch of parsley, chopped
100 g (3.5 oz) cheddar, shredded
60 g (2 oz) mozzarella, shredded

Olive oil
1 hot pepper, finely chopped
2 zucchinis, sliced
Juice of 1/2 lemon
Salt, to taste
Black pepper, to taste
1/2 tsp dried garlic
Parmesan cheese, for sprinkling
