Brownie Layered Cookie Dough Cheesecake

1. Prepare Brownie Layer: Preheat your oven to 350°F (175°C). Prepare the brownie mix according to package instructions and pour it into a greased 9×13 inch baking dish. Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Allow to cool completely.
2. Make Cookie Dough Layer: In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add vanilla extract and mix. Gradually add flour and salt, mixing until fully combined. Fold in mini chocolate chips. Set aside.
3. Prepare Cheesecake Layer: In a large bowl, beat the softened cream cheese until smooth. Add granulated sugar and vanilla extract, mixing until combined. Add eggs one at a time, mixing after each addition. Stir in sour cream until smooth.
4. Assemble the Cheesecake: Once the brownie layer has cooled, spread the cookie dough mixture evenly over the brownies. Pour the cheesecake mixture over the cookie dough layer, spreading it evenly.
5. Bake the Cheesecake: Bake in the preheated oven for 40-45 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly open for an hour.
6. Chill and Top: Refrigerate the cheesecake for at least 4 hours or overnight. Before serving, melt the chocolate chips and drizzle over the top. Garnish with whipped cream if desired.
