Caldito de Res (Mexican Beef Soup)
Ingredients:
2 lbs beef shank with bone (or beef stew meat)
8 cups beef broth (or water)
2 ears of corn, cut into halves
3 large carrots, peeled and cut into chunks
3 medium potatoes, peeled and quartered
2 zucchini, sliced
1/2 cabbage, cut into wedges
1 small onion, chopped
2 garlic cloves, minced
2 sprigs of fresh cilantro
1 bay leaf
1 tbsp vegetable oil
Salt and pepper to taste
Fresh lime wedges for serving
Warm tortillas for serving
