1. Prepare the Cheese Mixture
- In a large mixing bowl, combine softened cream cheese, shredded cheddar, and grated Parmesan.
- Add in the garlic powder, onion powder, smoked paprika, salt, and pepper. Mix thoroughly with a rubber spatula or hand mixer until the ingredients are well blended and smooth.
- Place the cheese mixture in the refrigerator for 10-15 minutes. This will make it easier to shape into mini cheese balls.
2. Prepare the Coating Ingredients
- While the cheese mixture chills, prepare the coating ingredients. Place the chopped bacon, chopped chives, chopped parsley, and pecans (if using) on a large plate or shallow dish.
- Toss the ingredients together until they’re evenly mixed. This will create a flavorful and colorful coating for the cheese balls.
3. Form the Mini Cheese Balls
- Remove the chilled cheese mixture from the refrigerator. Using a small spoon or cookie scoop, portion out about 1 tablespoon of cheese mixture for each mini cheese ball.
- Roll each portion between your palms to form a smooth ball, then set aside on a parchment-lined plate or tray.
4. Roll the Cheese Balls in the Coating
- Gently roll each cheese ball in the prepared bacon-herb mixture, pressing lightly to ensure the coating sticks.
- Make sure each cheese ball is fully coated on all sides, then place them on the serving platter.
5. Serve or Store the Mini Cheese Balls
- These cheese balls can be served immediately, but they taste even better after chilling for 30 minutes to let the flavors meld.
- If preparing ahead, cover the tray with plastic wrap and refrigerate until ready to serve. They can be stored in the refrigerator for up to 2 days.
