• 1 onion, finely chopped
• 1/4 cup (30g) all-purpose flour
• 2 cups (480ml) whole milk
• 1 cup (240ml) heavy cream
• 1/2 teaspoon nutmeg
• Salt and pepper, to taste
• 6 cups (360g) fresh spinach leaves
• 1 cup (100g) grated Parmesan cheese
• 1/4 cup (25g) grated mozzarella cheese
• Fresh parsley, for garnish
