Ingredients:
- 1 cup cashews, soaked in boiled water for 30 minutes
- 1 lb spaghetti
- Salt, for boiling water
- 4-6 garlic cloves, with shells intact
- 1 large onion, chopped
- 2-3 ripe tomatoes, chopped
- 1 can (13.5 oz) coconut milk
- Juice from half a lemon
- 2 tbsp tomato paste
- 3 tbsp Cajun seasoning (e.g., Slap Ya Mama)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2-3 dried arbol peppers (optional, for heat)
- 1/4 cup tapioca starch (or cornstarch)
- 3 cups almond milk
- Salt, to taste
- 1 tsp organic sugar (optional)
