Creamy Spinach & Tomato Cajun Spaghetti

Ingredients:

  • 1 cup cashews, soaked in boiled water for 30 minutes
  • 1 lb spaghetti
  • Salt, for boiling water
  • 4-6 garlic cloves, with shells intact
  • 1 large onion, chopped
  • 2-3 ripe tomatoes, chopped
  • 1 can (13.5 oz) coconut milk
  • Juice from half a  lemon
  • 2 tbsp  tomato paste
  • 3 tbsp Cajun seasoning (e.g., Slap Ya Mama)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2-3 dried arbol peppers (optional, for heat)
  • 1/4 cup tapioca starch (or cornstarch)
  • 3 cups almond milk
  • Salt, to taste
  • 1 tsp organic sugar (optional)
  • Fresh spinach leaves
