Garlic Butter Chicken Bites with Parmesan Cream Sauce and Cheesy Roasted Potatoes

1 lb baby potatoes, halved
2 tbsp olive oil
1/2 cup shredded cheddar or mozzarella cheese
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Roast the Potatoes: Preheat oven to 400°F (200°C). Toss the potatoes with olive oil, salt, and pepper. Place them on a baking sheet and roast for 20 minutes. Sprinkle with cheese and bake for an additional 5-10 minutes, until cheese is melted and bubbly.

Cook the Chicken Bites: Season chicken with salt, pepper, and Italian seasoning. In a skillet over medium heat, melt butter. Add garlic and sauté for 1 minute. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Make the Parmesan Cream Sauce: In the same skillet, add 1 tbsp butter. Pour in the heavy cream, then add Parmesan cheese and garlic powder. Stir continuously until sauce is smooth and thickened, about 3-4 minutes. Season with salt and pepper to taste.

Serve: Place chicken bites on a serving plate, drizzle with Parmesan cream sauce, and serve with cheesy roasted potatoes. Garnish with fresh parsley.
