Step 1: Preheat the Oven
- Preheat: Preheat your oven to 350°F (175°C).
Step 2: Cook the Meat
- Brown the meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula.
- Add veggies: Stir in the diced onion and bell pepper. Sauté for about 5 minutes until the vegetables are softened.
Step 3: Combine Ingredients
- Add beans and corn: Mix in the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Stir to combine and let simmer for 5 minutes. Season with salt and pepper to taste.
Step 4: Assemble the Casserole
- Layer ingredients: In a greased 9×13-inch baking dish, spread half of the tortilla chips as the bottom layer.
- Add meat mixture: Pour half of the meat mixture over the chips, followed by a layer of cheese.
- Repeat layers: Add the remaining tortilla chips, then top with the remaining meat mixture and finish with the rest of the cheese.
Step 5: Bake
- Bake the casserole: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Step 6: Serve
- Garnish: Remove from the oven and let it cool slightly. Garnish with fresh cilantro if desired.
- Enjoy: Serve hot with sour cream or guacamole on the side for added flavor.
