Quick & Easy Vegan Lemon Mousse

  1. Zest the lemons and juice them, then set aside.
  2. In a blender or food processor, combine the silken tofu, lemon juice, lemon zest, icing sugar, salt, and turmeric. Blend until smooth.
  3. Spoon the mixture into 4 glasses and chill.
  4. In a separate bowl, whip the cream with the vanilla extract and 2 tablespoons of icing sugar until thick.
  5. Top the chilled lemon mousse with the whipped cream.
  6. Finish with a sprinkle of sprinkles.
  7. Chill until ready to serve.
