Prepare the Slow Cooker: Start by lightly greasing the inside of your slow cooker with cooking spray or a touch of olive oil to prevent sticking.
Layer the Ingredients: Begin by pouring half of the marinara sauce into the bottom of the slow cooker. Place half of the cheese tortellini over the sauce. Add dollops of half of the ricotta cheese on top of the tortellini. Next, sprinkle half of the mozzarella, Parmesan, and fontina cheeses over the ricotta. Scatter the minced garlic and Italian seasoning on top.
Repeat the Layers: Now, pour the remaining marinara sauce over the first layer. Add the rest of the tortellini, followed by the remaining ricotta and the rest of the shredded cheeses.
Add Alfredo Sauce: Drizzle the Alfredo sauce evenly over the top layer of cheese and tortellini. If you like a bit of heat, sprinkle red pepper flakes over the top.
Cook: Cover the slow cooker with its lid. Cook on low for about 4 hours or on high for 2 hours. The tortellini should be tender, and the cheese melted and bubbly by the end of cooking time.
Serve: When ready to serve, garnish with fresh parsley or basil if you wish. Serve it warm and enjoy the rich, cheesy goodness!
