Sweet Potato Fritters with Black Bean Salsa
Ingredients (Serves about 6):
Fritters:
- 6 tablespoons aquafaba (chickpea water)
- 2 tablespoons plain flour
- 1/4 teaspoon ground allspice
- 250g sweet potato, cleaned and coarsely grated
- 2 spring onions, finely chopped
- Salt and pepper, to taste
Salsa:
- 2 spring onions, finely chopped
- 1/2 x 400g can black beans (drained and rinsed)
- 150g cherry tomatoes, quartered
- 1 small avocado, diced
- 1 mild chili, finely chopped
- Juice of 1 lime
- 2 tablespoons chopped coriander (cilantro)
- Salt and pepper, to taste
