Place the whole sweet potato in a pot and cover it with water.
Bring to a boil and cook until tender when pierced with a fork, about 40-50 minutes.
Prepare the Sweet Potato:

4. Remove the sweet potato from the pot, run it under cold water, and peel off the skin.
5. Break the sweet potato flesh apart and place it in a bowl.
Make the Filling:
6. Add softened butter to the sweet potato flesh and mix with an electric mixer until well combined.
7. Add sugar, condensed milk, eggs, cinnamon, nutmeg, and vanilla extract.
8. Beat on medium speed until the mixture is smooth.
Assemble and Bake:
9. Pour the filling into the unbaked pie crust.
10. Bake for 55-60 minutes or until a knife inserted into the center comes out clean.
11. Let the pie cool before serving.
