1. Prepare the Fries:

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the potatoes. Cut them into thin fries, about 1/4 inch thick.
  • Soak the potato slices in water for 30 minutes (this helps them crisp up in the oven).
  • After soaking, pat the fries dry with a paper towel. Place them on a baking sheet lined with parchment paper.
  • Drizzle the olive oil over the fries and toss them to coat evenly.
  • In a small bowl, mix together the chili powder, paprika, garlic powder, onion powder, cumin, cayenne, and salt. Sprinkle this seasoning mix evenly over the fries, tossing again to coat.
  • Bake the fries in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.

2. Make the Cheese Sauce:

  • In a small saucepan, melt the butter over medium heat.
  • Whisk in the flour and cook for about 1 minute to form a roux.
  • Gradually add the milk, whisking constantly until the mixture thickens (about 3-4 minutes).
  • Lower the heat and stir in the shredded cheddar cheese, chili powder, paprika, garlic powder, and salt. Continue stirring until the cheese is melted and the sauce is smooth.

3. Serve:

  • Once the fries are crispy and golden, remove them from the oven and let them cool slightly.
  • Serve the fries with the warm cheese sauce on the side for dipping.
