1. In a large salad bowl mix flour and salt.
2. Dilute the yeast in lukewarm water and add it to the flour mixture.
3. Add the olive oil and knead the dough for about 10 minutes, or until smooth and elastic.
4. Cover the dough with a torch and let it rise in a hot place for 1 hour.
5. Preheat your oven to 250°C (480°F).
6. While the batter rises, make the sauce. In a saucepan, heat mashed tomatoes and add sugar and oregano. Let it simmer for 15 minutes.
7. Once the dough has risen, on a flourished worktop, spread it out as a disk and then transfer it to a baking plate covered with sulfurized paper.
8. Spread the tomato sauce evenly over the batter, then add the shredded mozzarella.
9. Bake the pizza for 12 to 15 minutes, until the crust is golden and crispy.
10. Just out of the oven, add some fresh basil leaves for the finishing touch.
