Muffins With Vanilla Pudding

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions:

Preparing the Batter
  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Mix well to combine.
Mixing the Wet Ingredients
  1. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth.
  2. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
Adding the Vanilla Pudding
  1. Sprinkle the instant vanilla pudding mix over the batter and fold it in gently until fully incorporated.
  2. If desired, fold in the chopped nuts or chocolate chips for added flavor and texture.
